15 Minute White Chicken Chili + Anthropologie Giveaway

fifteen minute white chicken chili - easy dinner recipe15 minute dinner - white chicken chili

Every day, right around four-thirty, everything seems to fall apart at our house. Snacks get spilled, toys are strewn everywhere (even if we just cleaned them up!), tantrums are thrown, and dinner seems to be the last thing on my mind. Brian usually gets home around five, and as much as I’d like to be the wife that has dinner on the table when he gets home, it rarely happens. Then my mom gave me her white chicken chili recipe. Life changed! This dinner is incredibly simple and takes less than fifteen minutes to make. Plus, it tastes like you spent all afternoon in the kitchen. Shh, don’t tell anyone otherwise. ;)

Amy’s White Chicken Chili
In a large pot add:
3 cans drained Great Northern White beans
2 cans Swanson's Chicken Broth
2 cans diced chiles
1 can Costco canned chicken with juices or Rotisserie chicken
1 TBSP dried onion
1/2 tsp Garlic Powder
1/2 tsp Garlic Salt

Heat on stove and then add 2 cups frozen super sweet white corn. Corn should only take a few minutes to cook and warm.
When it’s done, scoop into bowls and top with shredded cheese and diced avocado. Serve with tortilla chips.

Want another easy, 15 minute dinner? Hop on over to my mom’s blog for easy Swiss, grilled chicken and bacon sandwich. Mmm!

And now, let’s just take a moment to talk about these bowls. I’ve been in LOVE with these latte bowls at Anthropolgie for forever now. They come in all different colors and sizes and just scream ADORABLE. My friend Corina gave me the genius idea to buy one large bowl and one small bowl every time I stop by the store. That way, I walk out spending less than $10, but still grow my bowl collection, albeit slowly. I love pulling these bowls out for an extra pop of color at the dinner table or for parties.

If you’ve had your eye on these bowls for awhile, or anything else at Anthro for that matter, today’s your lucky day! These darling ladies and I have teamed up to offer you a chance to win a $120 gift card to Anthropologie. You can use the Rafflecopter below to enter. The giveaway will run from 12:00 am EST on September 18th until 11:59 pm EST on September 25th. All entries will be verified. Good luck!
