The BEST Chocolate Cupcakes…from a box!

Sundays always seem like the days that we feel the absolute urgent need to bake a treat. Anyone else feel that way? We began searching for French pastry recipes, European cookies, cakes, pies, you name it!  While we found tons of great recipes, we didn’t have all the ingredients. In fact, the only thing we did have was a box of chocolate cake mix and a few things in the fridge. Upon researching a few different recipes, we decided to combine them and use what ingredients we had for the ultimate chocolate cupcake. We made way more than what we were expecting (at least 30!) so we brought a bunch to a Memorial Day barbeque – they were a HIT! We paired them with some fluffy peanut butter frosting….ah, my mouth is already watering. Delicious! As in, sinfully good. I’m posting the recipe so I can refer back to it frequently, seriously our new fav!

Ingredients:
1 Box Pillsbury Chocolate Cake Mix (15.25 oz)
1 Package Instant Chocolate Pudding Mix
1/2 Cup Brown Sugar
4 Eggs
1 Cup Sour Cream (We used fat free)
1 Cup Whole Milk
1/2 Cup Vegetable Oil
1/2 Cup Water
Milk Chocolate Chips
 
Peanut Butter Frosting (from Our Best Bites)
1 cup peanut butter
1/2 cup real butter, softened
4 cups powdered sugar
1 teaspoon (ish) of vanilla
5-6 tablespoons of whole milk

Directions:
1: Preheat oven to 350 degrees and line muffin tins with cupcake liners.
2: In large bow, mix together all ingredients, except the chocolate chips. Beat for 2 minutes, or until combined well. Stir in chocolate chips. Use as many as desired (we used about 1.5 cups).
3: Scoop batter into cupcake liners until they are 3/4 full.
4: Bake in oven at 350 degrees for 19-21 minutes. (Ours baked for exactly 20 minutes and came out perfect!)
5: Let cool completely.
6: Frost with desired frosting. We love this recipe from Our Best Bites for fluffy peanut butter frosting.
7: Keep in fridge until serving. (They taste soooo good chilled!)

  3. I always want to make a treat on Sundays too! And I LOVE your new blog design. A new clean blog design always feels wonderful. I was seriously just looking at mine yesterday thinking I needed a revamping.

    1. Thank you!! And yes, I did design it myself. I scanned in the watercolor elements and painted the banner. The rest I did in photoshop. :)
